Lutein is an antioxidant that protects our eyes from cataracts and degeneration of muscles. And undoubtedly, green spinach is a rich source of Lutein as compared to eggs that have relatively low concentrations of it. But despite this real fact, eggs are considered to be more effective than spinach in protecting your eyes from cataracts. Does this not sound to be quite contradictory?
Again, despite this contradiction it is the ultimate truth above all. To be clearer, a recent study on aging by the scientists of Jean Mayer USDA Human Nutrition Research Center at Tufts University has come up with a discovery of this real fact. According to the discovery, the Lutein in egg yolk gets absorbed in our body more effectively in comparison to spinach and other leafy greens.
So, even though a single egg contains Lutein as less as ¼ cup of spinach, but it is absorbed three times more effectively in our body. This can possibly be because that the fat in the yolk helps our bodies in processing this antioxidant in a much effective way. Even though that spinach and other leafy vegetables are top sources of Lutein, but whole eggs are the best source of it.
