STUFFING 16 oz Jar spiced apple rings, -juice or water -reserve juice 1/2 t Salt 1 1/2 c Dry bread cubes pn Pepper 1 c Sliced 1/2" celery pn Allspice 1/4 c Chopped onion 4-5 lb whole roasting 1/3 c Butter or margarine, melted -chicken 2 ea Tb reserved spiced apple
-GLAZE- 1/4 c Reserved spiced apple juice 2 ea Tb water 2 ea Tb light corn syrup
Heat oven to 350~. Cut 5 spiced apple rings into eights; reserve remaining apple rings. Combine with remaining stuffing ingredients. Stuff chicken; secure to body of chicken. Place on rack in roasting pan. In saucepan, combine glaze ingredients. Cook, stirring occasionally, until heated through. Spoon glaze over chicken. Bake, basting occasionally, for 1 hour. If needed, add 1/4 cup water to basting juices. Loosley cover chicken with aluminum foil. Continue baking, basting occasionally, for 1-1 1/2 hours or until chicken is fork tender. Garnish with reserved apple rings.
