4 Just-ripe avocados 250 g Stuffed olives; sliced 500 g Bean shoots 3 tb Finely sliced spring onions Your favourite vinaigrette Salt and freshly ground -pepper

Peel and slice avocados and place in a salad bowl. Add stuffed olives, bean shoots and sping onions. Toss with your favourite vinaigrette and salt and pepper well. Serve at once with chicken or as a first course.
