3 Scallions, minced 1 sm Jalape?o, minced 1 Garlic clove(s), minced 1 tb White wine vinegar 1/4 ts Ground nutmeg 3 tb Olive oil 1 tb Ground allspice 3/4 ts Salt 1/2 ts Ground cinnamon 1/2 ts Black pepper

Combine all the ingredients, then smear the rub on the chicken. Put everything in a zip-top plastic bag and use it to massage the dry marinade onto the chicken breasts. Marinate for 2-4 hours. Makes enough for 2 whole chicken breasts. Fine Cooking October-November 1995
