3 tb Olive oil 1 tb Black pepper 3 tb Grated lemon zest -coarsely ground 1 tb Lemon juice 1 pn Cayenne 1 sm Hot chile pepper, minced 1 ts Salt

Combine all the ingredients, then smear the rub on the chicken. Put everything in a zip-top plastic bag and use it to massage the dry marinade onto the chicken breasts. Marinate for 2-4 hours. Makes enough for 2 whole chicken breasts. Fine Cooking October-November 1995
